Our specialty is elevated comfort food. No matter where people travel across the galaxy, they always seek out flavors that make them feel safe, grounded, and at home.

Our absolute favorite things to prepare are custom ice cream treats, because they always bring an immediate smile to a guest's face. Ice cream is the ultimate canvas for creativity. Dessert is the final memory a guest takes with them, and we want to make sure that memory is joyful and unforgettable.

What made you want to become a caterer/baker/cook/chef?:

I wanted to become a chef because cooking is the ultimate form of hospitality and comfort. Food is entertainment and an experience, which comes from my husband's career at Walt Disney World. There is nothing better than taking a classic comfort dish, giving it a creative twist, and watching it bring an immediate smile to a guest's face. We view the kitchen as a stage where we can craft memorable, happy moments.

We are deeply inspired by three things: human connection, sensory exploration, and visual storytelling. There is a profound pleasure in watching people bond over a meal they love, and we view food as the ultimate universal connector. To spark that joy, we are constantly exploring new textures and flavor profiles that surprise the palate. Because we eat with our eyes first, we also place a massive emphasis on great visuals. We want every plate that leaves Galactic Griddle to look like a stunning work of cosmic art before the guest even takes their first bite.

My favorite meal is always dessert. I have a massive passion for pastry and sweet treats because dessert represents pure joy and celebration. While savory food sustains us, dessert is an indulgence meant to make you smile. Our goal would be to elevate both of these worlds—whether that means crafting a gourmet, creatively topped griddled hot dog or designing a visually stunning, out-of-this-world cosmic dessert that leaves guests on a high note.

Between Rob and me, we bring a lot of hidden creative energy from outside the kitchen! For Rob, his fun fact is that he has been involved in major movie productions, bringing a cinematic eye to everything he does. As for me, I am actually a New York-published author with numerous books out under a pseudonym. We love storytelling, and we look at a menu the exact same way we look at a book or movie—it needs a great hook, a memorable journey, and a spectacular ending. We love bringing that sense of drama, world-building, and entertainment straight to the plate

Looking toward the future, our ultimate vision is to expand beyond the mobile food grid. We hope to establish a permanent, local brick-and-mortar entertainment venue right here in Scottsboro. Our goal is to seamlessly couple our high-energy food service with an immersive entertainment space, creating a central hub where the community can gather for great food, memorable experiences, and shared fun. Galactic Griddle is just the launching pad for the larger, interactive destination we are building for this community.
